The Weeknight Rush, Kale, and a Sneaky Mom Win

It’s a weekday evening — that beautiful mix of chaos and routine. You’re racing home from work, helping with homework, driving to after-school activities, and trying to keep the house somewhat functional. By the time dinner rolls around, you realize you haven’t even thought about cooking.

And honestly, why bother when the kids only ever ask for pasta? It’s easy, it’s fast… but deep down, you know it’s not exactly packed with nutrients. Still, who has time to prep elaborate meals on a Tuesday night?

That’s when it hits you — the kale you picked up at the farmers market over the weekend. It’s supposed to be full of vitamins and antioxidants. Perfect! You quickly wash, chop, and sauté it, feeling quite proud of yourself.

     

Then your teenager walks by, takes one look, and says, “Is that kale? I’m NOT eating that!”

Oh boy.

For a split second, you consider giving up and boiling more pasta. But then you remember: your kid loves soup. So you toss that kale into the blender, add a splash of A2 milk (just enough to mask the green), and blend until it’s smooth and creamy.

Two minutes later, you serve a “new side soup” with dinner. It’s warm, comforting, and full of hidden nutrients — and no one suspects a thing. Plus, the pasta is with pesto, which is rich in healthy fats (monounsaturated and polyunsaturated), protein, fiber, and minerals like calcium, potassium, phosphorus, and magnesium, along with vitamins A, E, and K.
